Keto Christmas Crack (a.k.a. Keto Cracker Toffee That Tested My Sanity)

Let me just say this upfront:
If you’re expecting perfect cracker lines and a calm baking experience… this is not that recipe.

I made a keto version of the viral Christmas crack, loosely based on the keto cracker toffee from All Day I Dream About Food, and within minutes I was questioning all my life choices.

The crackers floated.
The toffee spread like lava.
The pan looked like a crime scene.

But I pushed through — and I’m glad I did, because once it set, this stuff was rich, crunchy, buttery, chocolatey perfection.

So here’s the recipe, with realistic expectations baked in.

Ingredients

Base

  • 1 large box of Simple Mills Almond Crackers

Toffee Layer

  • 1 cup unsalted butter Kirkland’s best ;)

  • 1 cup of Swerve granulated (I would use allulose next time! Swerve breaks and has too much of a cooling taste - NOT my preference)

  • 1 cup brown sugar–style keto sweetener (I used Truvia Brown Sugar!)

  • ¼ tsp Salty Provisions Butter Salt #iykyk

  • 1 tsp vanilla extract

Topping (I doubled this because life is short)

  • 2 cups sugar-free chocolate chips (Used Lily’s SemiSweet)

  • Optional: chopped pecans or almonds or use ChocZero SF Marshmallows!

  • Salty Provisions Flaky sea salt for finishing

Instructions

  1. Preheat oven to 350°F and line a rimmed baking sheet with parchment paper.
    Lay your keto crackers across the pan. If there are gaps or uneven edges, ignore them. This is not a geometry test.

  2. Make the toffee.
    In a saucepan over medium heat, melt the butter and sweetener together. Stir constantly until it comes to a rolling boil.
    Let it boil for about 3 minutes, stirring nonstop so it doesn’t scorch. I used a candy thermometer to turn off the heat at 310F right at hard crack

  3. Remove from heat and stir in salt and vanilla.

  4. Pour the toffee over the crackers.
    This is where things get chaotic. The crackers may float. The toffee will spread aggressively.
    Resist the urge to spiral.

  5. Bake for 10–12 minutes, until bubbly and caramelized.

  6. Remove from oven and immediately sprinkle chocolate chips evenly over the top.
    Let them sit for a minute, then spread gently into a smooth layer.

  7. Add nuts if using, and finish with flaky salt.

  8. Chill until fully set, then break into pieces — uneven shards encouraged.

Final Thoughts

Was this pretty at first?
No.

Was it easy like TikTok promised?
Also no.

Was it worth sticking it out instead of throwing the pan through the window?
Absolutely yes.

Next time I’ll go in with realistic expectations, a calmer nervous system, and zero concern for straight cracker lines — because messy doesn’t mean wrong, and delicious doesn’t require perfection.
